Leeks

Are they ready? or do they need to flower or go over the winter or anything before we use them. Reading that back it seems like a really dumb question, but Tony Archer always seems to be digging leeks out of frozen soil (Am an avid Archers fan).

They will keep in the ground over winter so you can dig them as you need them. Don't let them flower, though - the flowering stem in the middle of the plant is very tough and not good eating.
