Recipe for tomato and chilli relish

     I made some this morning and it's come out well.  It made one normal sized jam jar full with a bit left over.

    Tomato and Chilli relish


    600g ripe tomatoes, skinned and diced

    1½ tablespoons oil

    150g onion, finely diced

    2 medium red chillies, finely diced 

    3 cloves garlic, crushed

    90g brown sugar

    100ml brown malt vinegar

    Salt and pepper to taste


    Heat the oil in a saucepan, add onion and chillies and cook until soft.

    Add the garlic and cook for a further minute.

    Add tomatoes, sugar, vinegar, salt and pepper.

    Bring to the boil and simmer for about an hour until the mixture is thick.

    Pour into hot sterilised jars and seal.

     

    Instead of using medium sized chillies, I actually used 6 of the Bolivian Rainbows (with their seeds) and it's come out quite hot Big Smile

    That sounds good Sue. I like the idea of a hot and spicy relish.Stick out tongue

     I've taken a photo for you Miranda.  It's a bit darker than it probably should be as I used the dark muskavado sugar (I've got some light brown sugar in the cupboard but only enough to make some more flapjacks).

     Looks great - do you think we could make it with green toms Sue instead of the reds?

     You probably could make it with green tomatoes Richard.  I used up the last of my ripe tomatoes making it and I will definitely be using some of the frozen tomatoes to make another lot.  You could probably use tinned tomatoes instead if you drain off a lot of the juice.

     The relish turned out nice making it with green tomatoes instead of red.

    We only had one chilli pepper so just used the one together with the seeds, it was hot enough for us, and it gave the relish a little 'kick'  Smile
