A friend of mine is looking for a good recipe for tomato chutney.  The only thing is, I forgot to ask her if she wanted one using ripe tomatoes or green onesEmbarrassed  I have told her about this forum and hopefully she will be along as I'm sure she will have some good recipes to swap with us too.

Green tomato chutney - makes 4lb

    2lb green tomatoes, chopped

    8oz onions, chopped

1lb cooking apples, peeled and chopped

8oz sultanas, or other dried fruit

    8oz brown sugar

    1 pint vinegar

    2 tbsp mustard seed

    2 tsp cinnamon

1 inch of fresh ginger, peeled and finely chopped/grated

Put all ingredients into a large heavy-based saucepan and bring to the boil. Simmer uncovered until the mix is thick and has reduced, which could take 2-3 hours. When you can scrape the spoon across the bottom of the pan without the mixture filling in the gap right away, it is done. Put into hot, sterilised jars and seal. Keep for at least two weeks before using.

When I did this chutney a few weeks ago, it attracted every wasp in the area, so be prepared - hang up netting infront of open windows/doors or put out a wasp trap, like a dish of jam, to divert their attention. Or make it after dark.

Red Tomato Chutney Makes: approx 4lb

     6lb RipeTomatoes
    1lb Onions
    12oz Sugar
    ½ pint Malt Vinegar
    1oz Salt
    2 tsp Paprika
    ¼ tsp Cayenne Pepper

Wash and chop the tomatoes, peel and chop the onions.
Place the tomatoes and onions into a heavy bottomed saucepan, cook gently to release the tomato juices, simmer for 20 - 30 minutes until tender.
Add the salt, paprika, cayenne and half of the vinegar, cook gently for 45 minutes or until it begins to thicken.
Add the sugar and remaining vinegar, stirring until fully dissolved.
Continue simmering, until the mixture becomes thick, stirring occasionally. Pour into sterilised jars.
Leave for 3 - 5 weeks before sampling to allow the flavour to mature

Thanks Miranda and BB.  I've been looking for a recipe for a tomato and chilli relish myself like the one that I get in a jar from Sainsburys and looking at the red tomato chutney, if I add some chillies to that one, it should be very near to it.Big Smile

That sounds like a good idea, Sue. OH doesn't like chutney, but I think he'd feel differently about a tomato and chilli relish!

Whether you think you can do a thing, or think you cannot, you are right.

     Hi All :-)

I'm the friend of Sue's and new to this forum :)

Thank you all for the recipes, they will be tried and tested asap, I have over 6lb of ripe toms to use up and possibly 4 or 5 lb of green toms so both recipes are greatly appreciated :)

    Thanks again

Welcome Unique, I'm gonna be doing the green recipe of Miranda's - its very similar to the one I did last year, my only prob is that for once, I seem to have a lot of 'ripe toms' this year so maybe's will do some of both recipes!!!

     Hi Sue Big Smile

Took a while but I got here eventually.

I'm having a problem with my emails being received.  If I click on the link in the email to go to the desired post it runs an error and it wont open the page.  Any ideas what that could be at all?

     Hi Susiq Smile

thank you for the welcome, if I lived nearer you could have had some of my ripe toms, I gave a load away earlier in the week as I hate to see anything go off!  I'm just waiting for the last of my jars of pickle to finish (should be today) and I'll make the chutney and let you all know how I get on Big Smile

Sorry unique, I don't have the answer to that one, I've disabled the emails in my profile as I end up getting so many of them, I don't really need to be reading all my own posts twiceSurprise

Yes I've noticed that too so I think I might just do the same. This must be the only forum that does that, I dont know of any other that send you an email of the post you made Surprise
