     Any ideas?  Many of these are appearing in our vegetable plot this spring.

    It looks like a dock weed to me.
    To get rid of them you need to dig out the whole root as any pieces left behind can regrow. If you've got a weed like this (dandelions, thistles and bindweed are the same) it's best not to use a rotivator as it chops the root into pieces - each one of which makes a new plant.
