Poor man's potatoes recipe

    This one will help to use up some of your potatoes and onions. There are a few versions of this Spanish dish, but I like this one. It goes well with meats or sausages.

     

    Poor man's potatoes

    2-3 onions, sliced

    3-4 medium sized potatoes, cut into segments (6-8 per potato)

    2-3 green peppers, cut into largish slices

    As much garlic as you like, chopped

    4-5 bay leaves, fresh if you have them

    Olive oil for frying

    Fry the onions very slowly in plenty of olive oil until they are soft and start to turn golden, then add the green pepper and the bay leaves and cook for about ten minutes on low heat. Add the potato slices and the garlic, cover the pan and cook on low heat until the peppers and potatoes are soft. Stir occasionally to stop it from sticking.

    I served this the other night with some Toulouse sausages and it was so filling that we didn't finish it, so the next day I made a left-overs snack. Cut up the cold sausage and simmered it for a few minutes in pasatta, to which I added a few pinches of thyme, and then mixed it in with the potato dish and heated it all through. It was amazing.

    For heaven's sake let me know when you do that one again Miranda and I'll pop down from NW Cumbria and beg a plateful! Sounds delightful.

     Sounds good. Reckon you could get away with adding some courgettes too.

     That sounds lovely. I make this one sometimes and it sounds a bit similar, although cooked in the oven rather than on the hob. Good autum/winter food, anyway. :)
