This one will help to use up some of your potatoes and onions. There are a few versions of this Spanish dish, but I like this one. It goes well with meats or sausages. Poor man's potatoes 2-3 onions, sliced
3-4 medium sized potatoes, cut into segments (6-8 per potato) 2-3 green peppers, cut into largish slices
As much garlic as you like, chopped 4-5 bay leaves, fresh if you have them Olive oil for frying Fry the onions very slowly in plenty of olive oil until they are soft and start to turn golden, then add the green pepper and the bay leaves and cook for about ten minutes on low heat. Add the potato slices and the garlic, cover the pan and cook on low heat until the peppers and potatoes are soft. Stir occasionally to stop it from sticking. I served this the other night with some Toulouse sausages and it was so filling that we didn't finish it, so the next day I made a left-overs snack. Cut up the cold sausage and simmered it for a few minutes in pasatta, to which I added a few pinches of thyme, and then mixed it in with the potato dish and heated it all through. It was amazing.
