If anyone is interested, here is my recipe for home made coleslaw that I make on a regular basis. It consists of main ingredients and optional extras:-
Homemade Coleslaw -Quick and easy to make tasty in sandwiches, with salads etc.
Main Ingredients white cabbage ( 2 or 3 slices) carrots (3 medium) onions (one or two) mayonnaise 2 tablespoons
optional extras:- (depending on what I find around in cupboards and fridge!) sultanas currants cherries chunks of cucumber/courgette cheese (small chunks) spring onions...
I make this in a large bowl as its easier to stir up the ingredients.
Chop the slices of white cabbage into roughly 2" (50mm) lengths and put in the mixing bowl. Slice up carrots (-I use a potato peeler!)-add to bowl. Peel and slice onions and then chop up into strips-add to bowl.
Add optional extras as required Add mayonnaise Stir up all ingredients (I use large wooden spoon). Keep in a container with lid in the fridge.

Sounds delicious. I think it would be nice with some nuts in as well?

Yummy -and healthy, I should think as you don't use much mayo. I like chives in my coleslaw - celery might be good too.

I bet that doesn't last long, Richard. I also make coleslaw and use your basic ingredients, except that I add 1tsp of sugar and 2tsp of malt vinegar. It makes all the difference.

I've not tried adding some vinegar and sugar Miranda but will give that a go next time.
I have used celery chopped up in it before Phot's but forgot to write that one on the recipe. I've also used sesame seeds and nuts BB,but I left that out just incase anyone had a nut allergy. All these give a nice crunch to the coleslaw. Sunflower seeds,or any other type of edible seed would be good also. I suppose you could also add some tomatoes chopped up to it to make it a bit more colourful as these are quite plentiful now.

I've not tried adding some vinegar and sugar Miranda but will give that a go next time. I've done it for years after I did a stint in catering. I'd be interested to know if you think it makes a difference, Richard.

I'll let you know what I think when I make my next batch Miranda.
If anyone does make some I'd be interested to know if you made it differently, added anything else, or suggestions for improvement etc.... Thanks Richard
