     I've got a lot of tomatoes. A really big lot ... I'd like to try making sun dried tomatoes - anyone know how to do that at home?

    I also have plenty of herbs, so I'm going to make soup and pasta sauces and freeze them. What else could I do?

    Hi Phot's there's a gorgeous recipe in Delia's summer collection which I tried last year - Roasted tomato soup with a puree of basil - If you haven't got that book, I imagine you can probably find it on Delia's on line web site.

    I have tried drying my tomatoes but British tomatoes sem to be too watery.  I skin and freeze them for adding to winter soups and stews.  Mrs Bogweevil prefers to make basil and tomato pasta source for microwaving for a quick meal.

     One of the varieties I've grown is Super Roma - they're quite dry compared to the others, so I'll try drying them.

    The drying recipe sounds easy enough. I think I'll do them on a sunny windowsill, rather than outdoors. It says, "Plan on 10 standard tomatoes to get one ounce of dried tomatoes."  good thing I've got a lot!

    For the past 2 years I've made tomato relish. I just google 'tomato relish recipes' and see which one I fancy. It's always gone down well with friends and family.Big Smile

     Thanks, Tracy. I hadn't thought of relish, but I'll give it a go. OH quite likes it but it's never spiceyenough for him - I could add in some chillies.

    I've got a tray of tomatoes drying - they look OK so far.

    A friend of mine in America dries her tomatoes by slicing them in half, laying them on baking sheets cut side up, and putting them in a very low oven for 6+ hours.

    Hi, I've just found last years recipe. It's nice and simple and tastes great.

    2kg tomatoes skinned and chopped

    1kg onions finely chopped

    1kg sugar

    2cups white wine vinegar

    1tblsp curry powder

    1/2 tsp cayenne pepper

    1 1/2 tblsp mustard powder

    pinch salt

    put everything in a large pan and bring to boil whilst stiring, then boil gently for 1 1/2 hours.

    mix 1tblsp cornflour and extra 1/2 cup of white wine vinegar to thicken stiring all the time. add a little at a time to ensure you get the right consistancy.

    Hope you enjoy it.

     The tomatoes that were supposed to be drying went furryIndifferent so I put them on the compost heap. Perhaps I should have used a lot more salt?

    Hi

    Did anyone have any success drying tomatoes last year, especially using an oven ?

    I have a warming drawer in my refitted kitchen, and think that this could be a good way to dry them. Anyone tried this?

    I was succesful with a second batch. I used Aunty Madge tomatoes (they're small) and a larger proportion of salt. I kept them on a sunny windowsill, but put them in the oven after removing anything I'd cooked and switched it off, so they had a few periods of low heat. Once they seemed dry (they never went crisp, but I looked atdried tomatoes in a shop and they seemed the same) I put them in a screw top jar. Were still fine in June when I finished them.

    Have lots of toms now, so will try again this year.

    Apart from in a drier or low oven Phot's. I heard that putting them on the dashboard of your car on a really sunny day and parking it in sunny spot is very effective. I know it sounds daft but it does get pretty hot inside a closed up car on a hot day. I believe it only takes 2 days. That's always assuming we get 2 more sunny days.
